Summer Salad


Here's a recipe for a quick, light summer salad.  We had it this weekend and it was delicious.  Since it was made for a party for 25 people (remember that when reading below), the proportions would need to be adjusted for fewer people.  I'd figure an ear of corn for 2 people.

10 ears of corn, boiled and cut from the cob
2 packages of grape or cherry tomatoes
1 cup of cilantro
1/2 of a red onion
1 avocado, sliced into small pieces (optional)
Salt and pepper to taste

Dressing:
The juice of 6 limes
Approximately 1 cup of extra virgin olive oil
2 table spoons sugar or Splenda

Combine all of the salad ingredients together, mix in dressing and refrigerate until ready to serve.

Serves approximately 25 people
